Since zucchini is really the only vegetable thriving in my garden, I've been scouring the
internet for some zucchini recipes. So far I've found this
one on
Epicurious. Delicious!

I made some delicious zucchini the other day! I sauteed it with red onion and a couple of other veggies and herbs. Then added a cup of cooked couscous to the pan and stirred in some feta cheese and sun dried tomatoes.
