- Bunch of tomatoes, cut into bite size
- 1 shallot, thinly sliced
- 1 tbsp red wine vinegar
- 2 tbsp olive oil
- Pinch of salt and pepper
- 1 tbsp chopped thyme ( I used lemon thyme from the garden)
Place tomatoes in bowl, top with sliced shallots. Mix all dressing ingredients together in small bowl and drizzle on top of tomatoes mix. Easy Peasy!
Now if only my tomatoes could grow in my garden (insert long sigh!)

Sounds delish! Have you tried those deck tomato plants? There is the box on your deck kind, and then there is the upside down kind. They are supposed to be really good if you can't grow them in your gardens :)
